Apple & Parsnip Salad with Blue Cheese Skyr Dressing
Description
Fall staples like parsnip and apples get sliced thin and get tossed with a blue cheese skyr dressing to create a flavor packed salad!
Ingredients
Blue Cheese Skyr Dressing:
1/2 Cup
Icelandic Provisions Plain Skyr
1/4 Cup
Blue cheese
2
Garlic cloves
minced
1/2
Shallot
Minced
1 Teaspoon
Lemon juice
2 Teaspoon
White vinegar
Salt & pepper
to taste
Baked Skyr:
1 Cup
Icelandic Provisions Plain Skyr
2 Tablespoon
Bread crumbs
Salt & pepper
to taste
Salad Base:
2 Cup
organicgirl 50/50 greens blend
1
Apple
cored and sliced thinly
1/2
Parsnip
peeled and thinly sliced
1/3 Cup
Pecans
1/4 Cup
Blue cheese
Recipe
To make the dressing:
Add all salad dressing ingredients into a food processer and blend till smooth. Add a little water if the dressing is too thick, add less or more to achieve desired consistency. Set aside.
To make the baked skyr balls:
Measure out the plain skyr and place it in a strainer lined with a paper towel (or cheesecloth) over a bowl. Wrap the skyr with the towel/cheesecloth and add a weight on top to help push the water out of the skyr. Wrap the strainer and bowl with cling wrap and place it in the fridge overnight to strain.
Add the strained skyr, breadcrumbs, salt and pepper and mix until combined.
Scoop into tablespoon sized balls and roll in breadcrumbs until fully coated. Preheat oven to 450 degrees and drizzle the skyr balls in a little bit of oil. Bake the skyr balls for about 15-20 minutes or until golden.
Assemble the salad:
Spread the greens as the base and top with apple slices, thinly sliced parsnip, blue cheese and pecans. Top with warm crispy skyr balls and drizzle with dressing. Serve immediately. Enjoy!
