Recipe
Step 1:
Insert a popsicle stick into the base of a 3-portioned (3.5-4 oz each) popsicle mold, and fill each mold with the strawberries and cream skyr.
Step 2:
Cover the popsicle tray with a lid or plastic wrap, and place in the freezer for 5 hours, or until fully frozen.
Step 3:
For the chocolate shell mixture, place the chocolate chips and coconut oil into a microwave safe bowl. Microwave in 30-second increments, mixing in between each interval, until melted. Whisk everything until smooth, then transfer to a tall narrow glass.
Step 4:
Remove each popsicle from its mold and dip into the chocolate shell mixture, letting the excess drip off back into the glass. Transfer the popsicle to a baking sheet lined with a piece of parchment paper. Repeat this process until all popsicles have been dipped.
Step 5:
If desired, drizzle a bit of extra chocolate over each popsicle once the chocolate has slightly hardened. Place the sheet in the freezer for a few minutes to allow the chocolate to fully set.
Step 6:
Remove the popsicles from the freezer and enjoy right away, or let sit at room temperature for a few minutes so that the skyr can soften.
