High Protein Cinnamon Apple Overnight Oats

Apple, cubed

Water
1 Tablespoon
Maple Syrup
1/4 Teaspoon
Ground Cinnamon
Pinch ground nutmeg
Pinch kosher salt

Icelandic Provisions Plain Skyr
1 Cup
Old Fashioned Rolled Oats
1 Tablespoon
Chia Seeds
1-2 Tablespoon
Maple Syrup
1/2 Teaspoon
Vanilla Extract
3/4 Teaspoon
Ground Cinnamon
1 Cup
Milk of choice
Recipe
Step 1:
Add the diced apples, water, maple syrup, cinnamon, nutmeg, and salt to a medium saucepan. Set the pan over medium-low heat and cook until the apples have become tender and most of the liquid has reduced, about 10 minutes. Remove from heat and let cool.
Step 2:
Add the skyr, rolled oats, chia seeds, maple syrup, vanilla, cinnamon, salt, and oat milk and all but 3-4 tbs of the cooked apples to a large bowl and mix well to combine.
Step 3:
Divide the oat mixture between two sealable jars or containers. Place the remaining cooked apples in a separate sealable jar. Place everything in the refrigerator to chill overnight.
Step 4:
When ready to eat, top with remaining apple and enjoy.
