Latkes with Charred Scallion and Chive Skyr

These crispy golden latkes are a staple for the holidays or anytime at all. With a few simple tricks you can have crunchy, crispy latkes on your table. Ingredients

Large Russet Potatoes
1/2
Medium Yellow Onion
1 Teaspoon
Salt
2 Tablespoon
Panko Breadcrumbs

Egg
Neutral Oil
for frying
1/2 Cup
Icelandic Provisions Low Fat Plain Skyr
2-3
Scallions
1 Teaspoon

Pinch of salt
Flaky salt for topping

Make the Charred Scallion and Chive Skyr
On a hot skillet, add oil and let it heat up. Add the scallions onto the hot pan and let them sit until the bottoms get charred. Once charred flip the scallions. Once charred pull them off the skillet and give them a rough chop. Add the charred scallions, the chives and salt into the skyr and mix until combined.
Make the Latkes:
Step 1: Wash, peel and grate the potatoes. Set aside. Grate the onion and add it to the grated potatoes. Add salt to the grated potato mixture and let it sit for a minute or two.
Step 2:
Over a bowl, place the grated potato into a cheesecloth or kitchen towel and tighten both ends of the towel to squeeze the excess water.
Step 3:
Once the water is expelled, add the breadcrumbs and egg and mix with your hands until everything is combined.
Step 4:
Heat a 1/4 inch of oil in a large cast iron pan over medium-high heat until the oil is hot. You can test a little bit of the latke batter to see if the oil is hot enough. It should bubble right away.
