Roasted Carrot Skyr Soup with Charcoal Oil

This quick and simple soup is perfect to make as that fall chill settles in. The sweetness of the roasted carrots gets tempered with creamy notes of Icelandic Provision Low Fat Plain Skyr. Drizzle charcoal oil on top to create a fun spooky look to this soup!

Carrots
3 Tablespoon
Neutral Oil
divided
3 Clove
Garlic

1 Teaspoon
Ground Coriander
1/2 Teaspoon
Ground Cumin
1 Teaspoon
Paprika
1 Tablespoon
Harissa Paste
1 Cup
Vegetable Broth
3/4 Cup
Icelandic Provisions Plain Skyr
1 Teaspoon
Olive Oil
1 Tablespoon
Lemon Juice
Salt & Pepper
to taste
1/2 Teaspoon
Activated Charcoal
2 Tablespoon
Olive Oil
Recipe
Step 1:
Preheat the oven to 425 degrees. Line a baking sheet pan with parchment paper. Set aside.
Step 2:
Wash, peel and slice carrots into diagonals. Toss with 1 tablespoon oil and salt. Bake for 24 minutes until tender and golden around edges.
Step 3:
While the carrots bake, sauté the chopped onions in 2 tablespoons of neutral oil. Add the minced garlic and cook until slightly golden around the edges. Add the spices and mix until everything is mixed.
Step 4:
Add the harissa paste and mix in until well coated. Add the roasted carrots and add the vegetable broth. Let everything cook for 5 minutes and then transfer to a high-speed blender.
Step 5:
Add the skyr, black pepper, olive oil and lemon juice into the blender as well and puree until smooth and silky.
Step 6:
To make the charcoal oil, add activated charcoal powder to olive oil and mix till combined. Set aside. Once the soup is blitzed, pour it into your favorite bowl and top with charcoal oil. Enjoy!
