Sweet & Spicy Cucumbers
Description
Persian cucumbers get sliced in an accordion style and then get mixed with a tangy, sweet and spicy date and chili dressing. The date molasses adds sweetness while the Aleppo pepper and Urfa chili provide spice. Thick and creamy Icelandic Provisions Plain Oatmilk Skyr get spooned beneath to add the perfect amount of creaminess to pair with these cucumbers. Perfect as a snack, a light lunch or as a side dish to a rich dinner.

Persian Cucumbers

For the dressing:
1 Teaspoon
Date Syrup
1 Teaspoon
White Vinegar
3 Teaspoon
Pomegranate Molasses
1 Tablespoon
Olive Oil
1 Teaspoon
Urfa Bieber
1/2 Teaspoon
Aleppo Pepper
1/4 Teaspoon
Kosher Salt
To Serve:
1/3 Cup
Icelandic Provisions Plain Oatmilk Skyr

Nigella or Sesame Seeds

Recipe
Step 1:
Spiral the cucumbers: Wash and cut the ends of the cucumbers. Place each cucumber between a pair of chopsticks, this will prevent you from cutting all the way into the cucumber.
Step 2:
Slice the cucumber at a 45 degree angle. Don’t cut all the way, only cut ¾ of the way through the cucumber.
Step 3:
Flip the cucumber to the uncut side and then slice the cucumber in straight lines. Don’t cut through the whole way.
Step 4:
Once all the cucumbers are sliced, place them a large bowl with 1 teaspoon of salt. Set them aside.
Step 5:
Make the dressing: Add all the dressing ingredients into a bowl and mix until fully combined.
Step 6:
Once the cucumbers have release the water, drain the liquid and give them a quick rinse and pat them dry.
Step 7:
Pour the dressing on top of the cucumbers and give them a gentle toss.
Step 8:
Spoon the Icelandic Provisions Plain Oatmilk Skyr on your desired dish and place the cucumbers on top.
Step 9:
Top with nigella seeds and flaky salt. Enjoy!
