Banana Bread
Recipe by Jenny Goycochea
Description
We love baking with our larger 24oz Traditional Skyr tub sizes! Skyr adds a plush texture to baked goods and this banana bread recipe is extra-moist, thanks to our Traditional Vanilla Skyr, and loaded with brown butter, chocolate chunks, and toasted walnuts. Happy baking. đđđÂ
Ingredients
8 Tablespoon
Unsalted butter
1 stick
3
Ripe banana, mashed
3/4 Cup
Brown sugar
1/4 Cup
Granulated sugar
2
Eggs
2/3 Cup
Icelandic Provisions Traditional Vanilla Skyr
1 Teaspoon
Vanilla extract
2 Cup
All Purpose Flour
1 Teaspoon
Baking soda
1/4 Teaspoon
Fine sea salt
6 Ounces
Bittersweet chocolate, chopped
3/4 Cup
Chopped toasted walnuts
Turbinado sugar, for sprinkling
Recipe
Step 1:
Preheat an oven to 350 F. Line a 9Ă5 loaf pan with parchment paper so that the paper hangs over the edges and spray with nonstick spray.
Step 2:
Melt the butter in a small saucepan over low heat and cook, swirling regularly, until light brown and nutty smelling. Remove from the heat and cool slightly.
Step 3:
In a small bowl, whisk together the flour, baking soda, and salt. Set aside. Combine the mashed banana and sugars together in a medium mixing bowl. Add the eggs and skyr and whisk together until smooth. Pour in the flour and fold together. Add the browned butter and fold until no streaks of flour or butter remain. Fold in the chocolate and walnuts and pour the batter into the prepared baking pan. Top with banana slices and turbinado sugar.
Step 4:
Bake for 60-65 minutes, or until a cake tester comes out clean. Cool in pan before slicing.
