Egg Salad

Eggs
1/2 Cup
Icelandic Provisions Traditional Plain Skyr
2 Teaspoon
Mustard
1 Teaspoon
Chives
finely chopped
1/2 Teaspoon
Dill
finely chopped
Salt & Pepper
to taste
Fresh Lemon Juice
to taste
Recipe
Step 1:
Place the eggs in a pot and cover, by an inch or so, with cold water.
Step 2:
Bring to a rolling boil. Then, with the lid on the pot, turn off the heat and let the eggs cook in the hot water for 10 minutes.
Step 3:
Fish the eggs out of the pot and immediately place in ice water.
Step 4:
Peel the cooked eggs and chop.
Step 5:
Stir together skyr, mustard, and herbs. Add the eggs and salt, pepper and lemon juice to taste.
