Roasted Winter Squash with Garlicky Skyr
Description
The perfect winter side dish spiced with za'atar and served with a thick and creamy garlic spread made with Icelandic Provisions Plain Skyr.

Delicata squash
halved, deseeded, and cut into 1/2 inch slices

Recipe
Step 1:
Heat oven to 400°F.
Step 2:
Place the squash slices and garlic on a large baking sheet. Drizzle with olive oil, season with za’atar, salt, and pepper, and toss everything together until well coated.
Step 3:
Arrange the squash and garlic in a single layer on the baking sheet. Place in the oven and roast for about 35 minutes, flipping everything halfway through for even browning.
Step 4:
For the skyr base: place the roasted garlic cloves in a bowl and mash well with a fork. Remove garlic peels and add the skyr, lemon juice, and mix well to combine. Season with salt and pepper to taste.
Step 5:
Spread the skyr inside a large plate or bowl and top with the squash. Garnish the dish with a drizzle of olive oil, a dusting of sumac, and a few parsley leaves.
